Beer Mac n Cheese is the Ultimate Good-Mood Food and it’s *Super Easy* to Make. Here's How

Want to take your mac + cheese – a classic childhood fave – to grown-up new heights? Just add beer! Chef Lenny B shows us how to make this hella tasty, and super easy, dish.

Mac + cheese is nostalgia in a bowl. It gives you your fill of dairy and carbohydrates, so while it always hits the spot, it should be reserved for special occasions only.

Like right now! Here’s how to make a grown-up, beer-infused mac + cheese that’s filled with flavour and will 100% put you in a good mood.

 

Beer Mac + Cheese / Serves 4

 

Ingredients for the Beer + Cheese Sauce

5 tablespoons butter

100g cooked bacon bits

½ teaspoon of thyme, removed from the stalk

3 tablespoons flour

½ cup of Caste Free, chilled

1 cup milk, chilled

½ teaspoon cayenne pepper (optional)

½ teaspoon garlic powder (optional)

50g grated smoked mozzarella

50g grated mature cheddar

50g mozzarella balls, torn into small chunks

1 sliced spring onion

 

Ingredients for the Macaroni

300g dried macaroni

2 litres water

1 tablespoon salt

 

How to Make The Beer + Cheese Sauce

1. In a medium or large saucepan on medium heat, add the butter. Add your bacon bits and cook through. Your bacon can brown a little but be careful that the bottom of the pan doesn’t turn black or dark brown or this will give it a bitter taste. Temperature control is very NB!

 

2. Remove the pan from the heat. Use a slotted spoon to remove the bacon and scrape the caramelised bacon bits at the bottom of the pan. Leave as much of the butter in the pan as possible and reduce your heat to low.

 

3. Put the saucepan back on the heat and add the thyme, cooking it for 2 minutes. Whisk the flour into the butter while over the heat for 5 minutes to make a roux, which should be thick but loose. Combine the beer, milk, cayenne and garlic powder and add to the roux. Whisk vigorously to remove any lumps.

4. Continue to cook the mixture for 10 minutes and whisk it as it thickens, taking care that it doesn’t stick to the bottom of the pan. Add your cheeses and continue to whisk until the sauce is thick and shiny like tomato sauce.

How to Prepare the Macaroni

1. Add 2 litres of water and 1 tablespoon of salt to a medium-sized pot and bring to a boil.

 

2. Add the macaroni and cook uncovered for 8 to 10 minutes or until al dente.

 

Last Step

Drain the water from the macaroni and return it to your pot. Add the beer and cheese sauce and mix thoroughly. Serve hot and season to taste. Garnish with sliced spring onion.

 

Pro Tips

Don’t use pre-grated cheese! Additives are added to keep it from sticking to the packaging and this causes it not to melt properly.

You will notice I haven’t added salt to the recipe. The salt in the macaroni water, bacon and cheese should eliminate the need for additional salt, although if you need to add more, go for it.

 

Why do the milk and beer need to be chilled? The cooler starting temperature makes for a much smoother sauce.
